These fermented beet slices are as delicious as they are easy to make. Tuck them into sandwiches, add them to salads or just enjoy them as a snack! They’ll add a punch of flavour anywhere.
- 2 cups (500ml) beets, sliced
- 2 tbs (30ml) coarse salt
- 4 cups (1L) water
- Place the beets in your Mortier Pilon fermentation jar.
- Prepare a brine solution by combining the water and coarse salt. Add the brine to the jar, making sure to leave at least 3/4 of an inch of headspace between the mixture and the rim of the jar.
- Let the mixture ferment at room temperature, covered, for 1 week. Once the desired level of fermentation has been reached, refrigerate or serve.
