3 1⁄2 cup (875 ml) mustard powder
1 1/3 cup (315 ml) whey
14 tbs (210 ml) water
2 tbs (15 ml) sea salt
In a bowl, mix together all the ingredients. Transfer the mixture into your Mortier Pilon fermentation jar. Make sure to leave 3⁄4 of an inch (2 centimeters) of headspace between the mixture and the rim of the jar.
Let the mixture ferment at room temperature, covered, for 3 days. Once the desired level of fermentation has been reached, refrigerate or serve.
