INGREDIENTS

  • 5 organic lemons 
  • 1 teaspoon cane sugar 
  • 1 teaspoon whey
  • 4 cups water 


PREPARATION

  1. Juice the lemons. Transfer the juice to your Mortier Pilon fermentation jar. 
  2. Add the sugar, whey and a small amount of water. 
  3. Mix. 
  4. Add the rest of the water. 
  5. Make sure to leave 5 centimeters of headspace between the mixture and the rim of the jar. 
  6. Let the mixture ferment at room temperature, covered, for 5 days. 
  7. Refrigerate or serve.
